In the aftermath of California's devastating wildfires, Skyla Olds arrived in the quaint town of Niwot Colorado in 2021, seeking a new anchor in life. There, she opened La Musette, a farm-to-table food truck with an ever-changing menu. The food truck earned a Slow Food Boulder County Snail of Approval and served as the kitchen to Niwot's Wheel House bar and community space for three years.
